Smoked Chicken Salad

The smoked chicken salad is my favorite. It is easy to install and makes use of leftover smoked chicken that you can get. Even if you have not smoked chicken or leftover chicken to barbecue, you can buy this business with rotisserie birds or take away one breast or two and use that.

While this salad would make a great lunch in a large number of women (we had quite a few orders for this in our restaurant for bridge clubs), isfriendly enough that one of our customers with the nickname "salad man."

so that this group of green has it all. The following recipe is directly scalable. Feel free to substitute ingredients. However, the salad, you should do something "robust" as used in the Roman, and NEVER, NEVER wet lettuce!

Recipe: Smoked Chicken Salad

Ingredients for each meal, salads of service:

5 ounces chopped romaine lettuce

1 / 4 cup bacon bits

1 / 4 cup dicedTomatoes

1 / 4 avocado, chopped

1 / 4 cup bean blacks, black eyed peas or other beans

4 ounces diced smoked chicken

BBQ Sauce

2 oz ranch dressing

Tortilla sticks
(Make tortilla strings cutting corn tortillas into thin strips as you can. Roast in a pan until crispy in olive oil. It can be prepared in advance and in an airtight container)

* Note: You can substitute tortilla chips for the strings was crumbling, but the result is not nearly asgood.

Installation:

Toss chicken with barbecue sauce until very moist and soft. This sauce is used to do with the Ranch Dressing mix so yo more.

Heat the chicken mixture.

Toss all ingredients except the chicken and the string. Put on a cold plate. Top with chicken mixture. Make a "nest" of strings at the top.

Enjoy.
