Zucchini CASSEROLE
3 cups diced zucchini
1 / 2 cup celery, diced
1 medium onion, diced
1 1 / 2 cup tomato juice
1 / 2 cup toasted bread crumbs
Slices of American cheese
Preheat oven to 350 degrees. In a pot 2 1/2-quart casserole layer 1 / 2 of the pumpkin, slices of onion, celery and cheese to cover the vegetables. Repeat the process with the second half of the vegetables, add the cheese over the top. top with the breadcrumbs.Pour tomato juice over all. Bake 45 minutes or until bubbly and heated through.
